4 egg whites
2 Tbsp sugar
5 cups shredded, unsweetened coconut
1 Tbsp vanilla bean paste
Pinch of salt
- Preheat oven to 325.
- Mix ingredients together, drop by small scoops onto baking parchment.
- Bake on convection until coconut is deeply toasted, about 18-19 minutes.
- Makes about 2 dozen.
