Coconut Macaroons

Coconut Macaroons

4 egg whites
2 Tbsp sugar
5 cups shredded, unsweetened coconut
1 Tbsp vanilla bean paste
Almond extract
Pinch of salt

Directions

  1. Preheat oven to 325.
  2. Mix ingredients together, drop by small scoops onto baking parchment.
  3. Bake on convection until coconut is deeply toasted, about 18-19 minutes.
  4. Makes about 2 dozen.
