4 eggs
2 T finely chopped green onions
2 T finely chopped fresh dill
2 T mayonnaise
2 t Dijon mustard
Dash of black pepper
3 c Bibb lettuce
1 large Granny Smith apple cut into wedges


  1. Hard boil the eggs. Peel and coarsely chop.
  2. Combine all ingredients except Bibb lettuce and apples and toss gently.
  3. Arrange the lettuce and apple wedges on a salad plate, and top with the egg salad.
